This is one of Yangzhou's most famous dishes.It is called the crab powder ball. It is named according to the shape and is very big. It is called Sixi Balls in the northern restaurant because there are four in the plate. The cooking method in the north is not longer than the Yangzhou Balls.
This is another of Yangzhou's famous dished,named Wensi tofu soup.This dish has same history to it and it goes like this.This was the imperial dish for Qianlong when he tourd the South and is firstly created by a monk named Wensi. A square of tofu is cut into more 5000 pieces. It is the typical work of knife skill of Yangzhou.
The third dish is known as braised shredded chicken with ham and dried tofu.It is soft with flavor and extremely fine with the characteristics of thin, hot, soup and change.
Last but not least,Yangzhou's most famous dish ever,Yangzhou fried rice.The fried rice is made with careful selection of ingredients, fine fabrication, exquisite processing, attention to the color matching and original flavor.
